Paul Funk looks to simplify, elevate Saint Kate’s menus: Deep Dish By Sari Lesk

Paul Funk has big plans for meatloaf.

Last year, shortly after the Saint Kate arts hotel opened in downtown Milwaukee, Funk took over as executive chef of the property. Now, with all three of the hotel’s restaurants up and running, Funk wants to push the hotel by The Marcus Corp. (NYSE: MCS) to serve memorable entrees.

In keeping with the original philosophy of Aria, the independent arts hotel’s all-day café, Funk said he is driven by the idea of taking an everyday dish like meatloaf and turning it into the best meatloaf a customer has ever had.
