Saint Kate The Arts Hotel invites you to The Japanese Table — an immersive, multi-course evening celebrating the artistry, tradition, and bold flavors of Japanese cuisine and craft spirits. Set within the intimate surroundings of the Arc Theater and dressed in the warmth of Japanese lanterns, table florals, and ambient uplighting, this is a dinner designed to engage every sense from the first sip to the final bite.

The evening unfolds across seven carefully curated courses, each a testament to the depth and elegance of Japanese culinary culture. Three decadent Wagyu courses, paired with rare Japanese whiskey and spirits, give way to three stunning sushi courses accompanied by a thoughtfully guided sake pairing. A sake expert will be on hand throughout the evening to walk guests through each selection, offering insight into the craft and tradition behind every pour. The night closes on a sweet note with a dessert course worthy of the meal that came before it.

This is not simply a dinner. It is an education in Japanese craft, a celebration of ingredients at their finest, and an evening of atmosphere and intention that could only happen at Saint Kate.

Welcoming Sake Master - Stuart Morris


Stuart Morris is a rare figure in the world of Japanese sake—an unassuming, relentlessly dedicated Boston native who has achieved the rank of Master of Sake and now crafts premium sake at one of Japan’s most respected breweries. As one of the few non-Japanese brewers to reach this level, his journey is defined by passion, perseverance, and a willingness to pursue what many would consider impossible.

For more than 25 years, Stuart has devoted his life to sake, immersing himself in its culture, traditions, and evolving styles. His path began behind the bar of a sushi restaurant in the U.S. Virgin Islands, where his curiosity was first sparked. That curiosity led him west to San Francisco and Napa Valley, where he deepened his knowledge through hands-on experience in fine dining while making frequent trips to Japan to study sake at its source. In 2010, he achieved a major milestone by passing the prestigious Kikisake-Shi sake sommelier exam in Tokyo—despite it being conducted entirely in Japanese, a challenge few outsiders have overcome.

Determined to go beyond appreciation and into craftsmanship, Stuart pursued apprenticeships in Japan. For three years, he knocked on brewery doors, slept on floors, and took on the humblest of tasks until he earned a place within the inner circle of sake brewing. Under the guidance of Master Brewer Masanobu Shindo at the renowned Shindo Brewery in Yamagata, he refined his skills and embraced the discipline of traditional sake making. Over time, he gained the trust and respect to brew alongside his mentor, transforming from student to peer.

Today, as both a Sake Master and brewer, Stuart has brought his expertise back to the global stage, developing sake programs and curated tasting experiences at top fine dining establishments across the United States. In 2023, a chance meeting with John Anthony Truchard opened a new chapter—one focused on building a portfolio of premium sakes for the American market through John Anthony Wine & Spirits. The debut collection, Hachidori Sake, includes Junmai, Junmai Ginjo, and Daiginjo expressions, each reflecting Stuart’s dedication to authenticity and craftsmanship.
